Fried chicken releases heat, oil and steam after packing. Effective packaging balances grease resistance, ventilation and structural strength so the meal stays presentable from kitchen pass to customer.

Manage Steam

A fully sealed box can trap moisture and soften the crust, while excessive openings lose heat and expose the food. Vent size and position should be matched to portion volume and delivery time. Testing with freshly cooked chicken shows the real balance between heat retention and crispness.

Control Grease

Board quality, coating and fold design work together to reduce oil staining and leakage. Corners and base locks deserve particular attention because grease can migrate through small gaps. Liners or absorbent sheets may be useful for longer holds or high-oil recipes.

Look for soft crust, grease penetration, weakened corners, odor transfer and condensation on the lid. Repeat the test with boxes stacked inside the actual delivery bag. If vents are adjusted, compare product texture and temperature rather than assuming more airflow is always better. Record the approved box dimensions, board, barrier, vent pattern, liner, closure and maximum filled weight. This creates an objective reference for quality control and makes later menu or portion changes easier to evaluate. Carton labels should also identify the pack size and approved production version for quick kitchen checks.
